Texas Meat Skillet
This Texas meat skillet packs all the flavors of Tex Mex cooking into a one pot dinner. This easy to make ground beef skillet is best served with tortilla chips or corn chips and is great for campfire parties!

Ingredients
- 2 cup ground beef
- 1/2 cup water
- 1 can (about 14.5 ounces) crushed tomatoes
- 1 can (about 15.5 ounces) dark red kidney beans, undrained
- 1 cup long-grain rice, cooked
- 1/2 cup bell peppers, chopped
- 2 teaspoon chili powder
- 1/2 teaspoon salt
- 1/2 cup Cheddar cheese, grated
- 1 cup tortilla chips, crushed
Instructions
- In a skillet, combine ground beef and water. Cover and cook over low heat for 15 minutes. Break up meat with a fork.
- Stir in crushed tomatoes, kidney beans, rice, bell peppers, chili powder, and salt. Bring mixture to boil; reduce heat. Cover and simmer for 20 minutes, stirring occasionally.
- Sprinkle cheese and tortilla chips over meat mixture before serving.
