Tuna Corn Cheese Bake

Ingredients

  • 1/4 cup green bell pepper, chopped
  • 3 tablespoons butter, melted
  • 2 tablespoons flour
  • 1 cup milk
  • 1/2 onion, grated
  • 2 teaspoons Dijon mustard
  • 1 teaspoon horseradish, optional
  • 1 teaspoon lemon juice
  • 7 3/4 ounces can tuna
  • 2 hard-boiled eggs, sliced
  • 16 ounces can corn, drained
  • 4 ounces cheddar cheese, grated

Instructions

  1. Cook green pepper in butter until tender. Add flour, stirring until smooth. Cook 1 minute, stirring constantly.
     
  2. Whisk in milk. Cook over medium heat, stirring, until thick and bubbly. Add onion, mustard, horseradish, lemon juice, and some salt and pepper.
     
  3. In a greased casserole dish, spoon in half the corn, one sliced egg, half the tuna, half the sauce mixture and half the cheese. Repeat layers.
     
  4. Bake at 350 degrees F for 30 minutes. Top with extra cheese if desired; bake 5 minutes more, until melted.

I need instrucions on how to save any recipe to my recipe box. on the line were your are suppose to be able click save recipe, does not always display when i want to save a recipe such as the Tuna Corn Cheese Bake that i wanted to save. each time i think i have figured out how to save a recipe the same way does not work on the next recipe that i want to save. Can you elp me? i am missing what looks and sounds like a lot of good recipe.

It sounds wierd but is quite delicious. My husband loves it and it is a nice change from Tuna Noddle.

Everything sounds good in this recipe until it calls for hard boiled eggs. That just sounds nasty to me and I can imagine what it looks like either.

This is very good and easy to make. Use a 2 Quart casserole dish. This has a lot of flavor and gives us a new way to use tuna without rice or noodles.
