Ingredients

  • 1 pound box elbow macaroni, cooked according to package directions
  • 1 stick margarine or butter
  • 1 package shredded sharp cheddar cheese
  • salt, to taste
  • pepper, to taste
  • 1 egg
  • 2 cups milk
  • 1 package Ritz crackers

Instructions

  1. Preheat oven to 375 degrees F.
     
  2. In a 2-quart casserole dish, layer cooked macaroni with thin slices of butter and sprinkles of cheese, adding salt and pepper to each layer. You should be able to do about 3-4 layers.
     
  3. After the top layer of butter and cheese, beat egg in a 2-cup measuring cup, then add milk to make 2 cups. Beat together and pour over macaroni casserole.
     
  4. Crumble Ritz crackers or sprinkle breadcrumbs over the top of the casserols.
     
  5. Bake for 45 minutes.

When I think of comfort food, I think of macaroni and cheese. It can be served as a main dish or as a side. If you have the time, homemade is much better than the boxed variety. For this recipe, I would use butter for a richer taste. I would also use reduced fat cheddar cheese and skim milk. Panko bread crumbs could be used for the topping instead of Ritz crackers. To ensure that the elbow macaroni is a good consistency in the casserole, it should be drained while it is still underdone. This is because the pasta will continue to cook in the oven.
