    This Ultra Creamy Mashed Potato Casserole is a side dish you can't resist! With both sour cream and cream cheese, this is one of the creamiest mashed potato casseroles you'll ever try.

    Ingredients

    • 4 pounds potatoes
    • milk, to taste
    • 1 cup sour cream
    • 1 (8-ounce) package cream cheese, softened
    • 1/4 cup butter
    • 1 1/2 tablespoon minced onion

    Instructions

    1. Pre-heat oven to 350 degrees F.
       
    2. Peel and quarter the potatoes and cook in water to cover until tender.
       
    3. Mash the potatoes with a little milk. Add sour cream, cream cheese, and butter.
       
    4. Place in a buttered casserole dish. Dot with shredded Cheddar or Colby cheese, if desired. Bake about 1 hour.
