White Hominy and Corn Casserole

Ingredients
- 3 cans (15.5-ounce) white hominy
- 2 cans (11-ounce) white corn
- 1 can (4-ounce) green chiles, chopped
- 1 tablespoon cornstarch
- 1/2 teaspoon white pepper, ground
- 1/4 teaspoon salt
- 8 ounces sour cream
- 1 1/2 cup (6-ounce) Monterey Jack cheese, shredded
- 1 1/2 cup (6-ounce) American cheese, shredded
- 1 teaspoon paprika
Instructions
- Preheat oven to 350 degrees F.
- Rinse hominy and drain well. Combine hominy and white corn, green chilies, corn startch, white pepper, salt and sour cream.
- Spoon half of hominy mixture into a lightly greased 11 X 7" baking dish.
- Combine shredded cheeses; sprinkle half of cheese over casserole.
- Spoon remaining hominy mixture over cheese.
- Bake covered until bubbly, about 35 minutes.
- Sprinkle casserole with remaining cheeses and paprika and bake uncovered for 5 minutes.
