Amish Country's Chicken & Dumpling Casserole

There aren't many dishes that can rival the comforting and delicious taste of traditional chicken and dumplings, but this recipe for Amish Country's Chicken & Dumpling Casserole is one of them. Ingredients

  • 1/2 cup onion, chopped
  • 1/2 cup celery, chopped
  • 2 garlic cloves, minced
  • 1/4 cup butter
  • 1/2 cup flour
  • 2 teaspoon sugar
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 4 cup chicken broth
  • 1 package (10-ounce) frozen peas
  • 4 cup chicken, cooked and cubed
  • __BLANK__
  • For the Dumplings:
  • 2 cup buttermilk biscuit mix
  • 2/3 cup milk

Instructions

  1. Preheat oven to 350 degrees F.

  2. Saute onion, celery, and garlic in butter until tender.

  3. Add flour, sugar, salt, pepper, and broth; bring to a boil. Cook and stir for 1 minute; reduce heat.

  4. Add peas and cook for 5 minutes, stirring. Stir in chicken.

  5. Pour mixture into a greased 13 x 9-inch pan.

  6. For dumplings, combine biscuit mix and milk with fork until moistened. Drop by spoonfuls onto casserole making 12 dumplings.

  7. Bake, uncovered, for 30 minutes. Cover with foil and bake 10 minutes more.
