Chili Lime & Chicken Bake

Sometimes a chicken casserole recipe just hits the spot. Perfect for a weeknight dinner, this hearty casserole is made with rice and chicken for a robust, spicy, meal that will feed the family. Make this wonderfully cheesy dish tonight!

Ingredients
- 6 ounce Fresh Take chili lime & panko recipe cheese breadcrumb mix, mixed together
- 2 cup chicken, cooked and shredded
- 2 cup long-grain white rice
- 1 can (10.75-ounces) fat-free reduced-sodium chicken broth
- 1 cup light sour cream
- 7 ounce jar of roasted red peppers, drained and chopped
Instructions
- Preheat oven to 350 degrees F.
- Reserve 1 cup of cheese mixture.
- Combine remaining cheese mixture with remaining ingredients; spoon into 1-1/2-qt. casserole sprayed with cooking spray. Top with reserved cheese mixture.
- Bake 20 to 25 min. or until heated through.
