Avocado with Chicken and Almond

Ingredients
- 2 spring onions
- 2 cup cooked chicken
- 1 tablespoon butter
- 1/2 cup slivered almonds
- 1 tablespoon wine vinegar
- 2 tablespoon lemon juice
- 3 tablespoon dry white wine
- 3 tablespoon cream
- 1 avocado
Instructions
- Finely chop spring onion and chicken.
- Melt butter in a saucepan. add spring onion, chicken and almonds. Cook until golden, stirring occasionally.
- Add wine vinegar and 1 tablespoon of lemon juice. Cook over high heat for 1 min. Add white wine and reduce heat. Simmer 1 min. Add cream and stir until thickened.
- Peel and and slice avocado. Sprinkle slices with second tablespoon of lemon juice. Spread chicken over avocado slices.
