Basil Chicken Parmesan

Ingredients

  • 2 tablespoon flour, all-purpose
  • 1 1/2 teaspoon basil leaves, dried, crushed
  • 4 whole boneless skinless chicken breast halves
  • 1 tablespoon olive oil
  • 10 3/4 ounce condensed tomato soup
  • 2 tablespoon Chablis, or other dry white wine
  • 2 tablespoon water
  • 1/4 cup green pepper, finely chopped
  • 2 tablespoon Parmesan cheese, grated
  • 2 cup cooked rice, hot

Instructions

  1. On waxed paper, combine flour and 1 teaspoon basil.
     
  2. Lightly coat chicken with flour mixture.
     
  3. Cook chicken in a 10-inch skillet over medium-high heat, in hot oil for 10 minutes or until browned on both sides.
     
  4. Remove; set aside.
     
  5. Pour off fat.
     
  6. In the same skillet, combine soup, wine, water, and remaining 1/2 teaspoon basil.
     
  7. Heat to boiling.
     
  8. Return chicken to skillet.
     
  9. Reduce heat to low.
     
  10. Cover; cook 5 minutes or until chicken is no longer pink, stirring occasionally.
     
  11. Sprinkle with green pepper and cheese.
