Ingredients
- 2 tbsp olive oil
- 5 oz butter (softened)
- 1 lemon
- 4 cloves garlic
- 5 rosemary sprigs
- 3 lbs whole chicken
- Salt & black pepper to taste
Instructions

Preheat oven to 375 degrees Fahrenheit.

In a bowl, zest the lemon and add butter.

Finely chop 3 sprigs of rosemary and add to the bowl.

Mix to fully combine and set aside.

Cut the lemon into half and insert it to the chicken cavity with crushed garlic cloves.

Add remaining rosemary sprigs and season generously with salt & pepper.

Rub the chicken skin with the butter-lemon mixture.

Roast the chicken at 375 degrees Fahrenheit for 45 minutes or until cooked.
