    Chicken Cacciatora

    Ingredients

    • 11/2 - 2 lbs. fryer parts or chicken, cup up into serving pieces.
    • 1/2 cup olive oil
    • 1 large onion,minced
    • 16 ounces can tomatoes, mashed
    • 1 pound button mushrooms
    • salt and pepper
    • 1/2 teaspoon, oregano
    • 3/4 cup sherry

    Instructions

    Pollo Cacciatora Alla Romana. Wash and dry chicken pieces. Brown in 1/4 cup hot oil over medium flame, and set aside until needed. Saute onion in remaining oil until soft. Add Tomatoes, mashed with fork, and simmer 5 minutes, stirring occasionally. Wipe mushrooms with damp cloth, and add to sauce. Add Browned chicken and seasonings, cover pan and simmer until chicken is tender, about 25 minutes. Turn occasionally. Add wine and cook 5 minutes longer, Serve hot with sauce. Serves 3.
