Chicken and Peaches Piquant

Ingredients

  • 2 whole skinned and boned chicken breasts
  • 1 1/2 teaspoon seasoned or regular salt
  • 1/2 teaspoon pepper
  • 14 ounce can sliced peaches
  • 1 1/2 tbls. vegetable oil
  • 1 large onion sliced
  • 1 cup ketchup
  • 2 tablespoon soy sauce
  • 1 large green pepper, cut in squares
  • Hot cooked rice

Instructions

Serves 4-5. Cut chicken in thin strips. Sprinkle with seasoned salt and pepper. Drain peaches reserving syrup. Saute chicken in oil two mins. Add onion; continue cooking untill onion is tender crisp. Blend ketchup and peach syrup with enough water to make two cups liquid; add soy sauce. Pour over chicken in sauce pan. Cover and simmer 20 mins Add green pepper and peaches. Replace cover and cook 10 mins. longer. Serve over rice.
