Indonesian Chicken W/green Beans

Ingredients

  • 6 boneless, skinless chicken breasts halves, cut bite sized
  • 2 Tbs. olive oil + 2 Tbs. olive oil
  • 10 cloves garlic, minced
  • 1 Tbs. minced ginger root
  • 1 small onion, chopped
  • 1 lb. fresh green beans, cut bite sized
  • Juice of 1 lime (or lemon)
  • 1 Tbs. double black soy sauce
  • 2 teaspoon brown sugar
  • 2 teaspoon turmeric
  • 1 teaspoon salt
  • 1/2 cup water

Instructions

Saute chicken in 2 Tbs. olive oil till cooked through. Set aside. Combine 2 Tbs. olive oil, garlic, ginger and onion. Saute till onion is soft but not brown. Add green beans and cook, stirring over medium heat, till bright green and just tender. Add lime juice, soy sauce, brown sugar, turmeric, salt, and 1/4 cup water. Slowly add remaining water as necessary to make the sauce of good consistency but not watery. Add chicken to coat with sauce. Serve Serves 8
