Kung Pao Chicken

We also had bell peppers in the fridge, so I went with the traditional zucchini + bell pepper combo. However, carrots and onions are also commonly used in this dish. Oh, and the peanuts. The peanuts are a requirement! The crunch from the stir-fried peanuts adds a fun texture to the finished version."
