- 4 boneless, skinless chicken breasts
- 8 small yukon gold potatoes, cut into quarters
- 1 small onion, cut into quarters
- 1 small bag of baby carrots
- olive oil
- salt and pepper
- dried herbs of your choice (in this case, rosemary and thyme)

Preheat oven to 350 degrees F.

Lightly spray a heavy baking sheet with cooking spray.

Place chicken on the sheet pan, leaving space between each one.

Scatter vegetables even across the pan.

Drizzle with olive oil. Season with salt and pepper and herbs.

Bake for 30-40 minutes, until chicken is cooked though and vegetables are tender and golden.
