One Pot Chicken with a Kick

Here's a one pot meal recipe that's sure to wake up your taste buds. This one pot chicken with a kick uses chili powder and cinnamon to create a spicy dish you're sure to love. Serve over white rice.

Ingredients

  • 2 pound chicken parts
  • 2 tablespoon shortening
  • 1 can tomato soup
  • 1/4 cup water
  • 1 cup onion, sliced
  • 1 clove of garlic, minced
  • 2 teaspoon chili powder
  • 1/8 teaspoon cinnamon
  • crushed red pepper to taste
  • 1/4 cup sliced pimiento-stuffed olives
  • 1 green bell pepper, cut into thin strips
  • cooked rice

Instructions

  1. In skillet, brown chicken in shortening. Pour off fat.
     
  2. Add tomato soup, water, onion, garlic, chili powder, cinnamon, and crushed red pepper flakes.  Cover and cook over low heat for 35 minutes.
     
  3. Add olives and green pepper. Cook 10 minutes more or until chicken is done. Stir occasionally. Serve over rice.
