Red Wine and Apricot Chicken
This apricot chicken recipe tastefully incorporates red wine. Both saucy and sweet it'll delight your taste buds. It's a satisfying meal you have to try!

Ingredients
- 1/4 cup red wine
- 1/4 cup red wine vinegar
- 1 cup dried apricots
- 2 1/2 pounds chicken pieces
- 1 chopped onion
- 1 tablespoon cornstarch
- 2 tablespoons water
Instructions
- Combine red wine and red wine vinegar, then add dried apricots to soak.
- Brown chicken pieces in pan. Remove chicken, leaving pan drippings.
- Saute chopped onion until tender. Return chicken to pan.
- Add apricot mixture and bring to a boil.
- Lower heat and cover, cooking chicken until tender (about 20 minutes).
- Remove chicken.
- Add a tablespoon of cornstarch to a couple tablespoons of water and add to apricot mixture. Stir to thicken. Pour over chicken.
