Red Wine and Apricot Chicken

This apricot chicken recipe tastefully incorporates red wine. Both saucy and sweet it'll delight your taste buds. It's a satisfying meal you have to try!

Notes

Delicious with rice pilaf.

Ingredients

  • 1/4 cup red wine
  • 1/4 cup red wine vinegar
  • 1 cup dried apricots
  • 2 1/2 pound chicken pieces
  • 1 chopped onion
  • 1 tablespoon cornstarch
  • 2 tablespoon water

Instructions

  1. Combine red wine and red wine vinegar, then add dried apricots to soak.
     
  2. Brown chicken pieces in pan. Remove chicken, leaving pan drippings.
     
  3. Saute chopped onion until tender. Return chicken to pan.
     
  4. Add apricot mixture and bring to a boil.
     
  5. Lower heat and cover, cooking chicken until tender (about 20 minutes).
     
  6. Remove chicken.
     
  7. Add a tablespoon of cornstarch to a couple tablespoons of water and add to apricot mixture. Stir to thicken. Pour over chicken.
