Roasted Whole Chicken with Lemon Veggies
"Roasted chicken is a favorite in our family! I know it’s so easy to pick one up from the grocery store, but there is something wonderful about the aroma of a roasted chicken filling the air as it cooks in the oven. Paired with my lemon veggies, you have an easy one pan meal! Just toss a salad and your meal is elegant and complete! This is a perfect, simple and stress free weeknight meal for busy families! The marinade that I use for the vegetables is a simple blend of lemon juice, olive oil, rosemary, oregano, black pepper and garlic powder! Whisk together and just toss in the veggies to coat. Arrange the vegetables around the chicken in a large roasting pan. Baste the chicken with the remaining marinade and roast for about an hour and one half at 375 degrees. Super simple! One of the biggest complaints I hear regarding roasting a whole chicken is that it is hard to tell when it is done. Use a meat thermometer and test in the thickest part of the chicken. A well done bird will register 180 degrees. This is pretty much a fool proof recipe. At 375 degrees, this dinner will be well done in about an hour and one half.
