"I have to confess that I've never been the best cook when it comes to fried chicken. I can't seem to get the coating perfectly browned and get the chicken cooked through at the same time. But I love fried chicken and can't live without it! So, many years ago, I decided I needed to do it different. Full Confession: for years I've used the microwave for the last half of the job and I use the skillet to get my chicken crispy on the outside. I guess it's because I'm also just a little impatient and relatively lazy."
