Sweet Apple Chicken Meatloaf
This unique idea makes a great recipe for meatloaf. Using ground chicken instead of beef, this recipe works on combining the delicious flavors of apples, spices and chicken. You won't think twice after making this Sweet Apple Chicken Meatloaf.
Ingredients
- 2 tablespoon butter
- 1 cup minced onion
- 2 unpeeled golden delicious apples, diced
- 2 cloves minced garlic
- 1/2 teaspoon dried tarragon
- 1/4 teaspoon dried savory
- 2/3 cup fresh bread crumbs
- 2 beaten eggs
- 1 tablespoon lemon rind, grated
- 2 green onions, chopped
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 1/2 pound ground chicken
- 1/2 cup applesauce
- 2 tablespoon dry bread crumbs
- 1 tablespoon packed brown sugar
Instructions
- Melt butter over medium heat; cook onion, apples and garlic, stirring occasionally, for 10 minutes or until golden.
- Add tarragon and savory; cook for 1 minute. Let cool 10 minutes.
- Preheat oven to 350 degrees F.
- Combine apple mixture, bread crumbs, eggs, lemon rind, green onions, salt and pepper; mix in ground chicken.
- Lightly pack into greased 9 x 5-inch loaf pan, smoothing top. Spread loaf with applesauce; sprinkle with bread crumbs and brown sugar.
- Bake in 350 degrees F for 1 1/4 hours or until meat thermometer registers 185 degrees.
- Broil 6 inches from heat for 3 minutes or until golden. Let stand 10 minutes before slicing.
