Chicken & White Bean Chili

Ingredients
- 1 tablespoon canola oil
- 1 medium onion, chopped
- 1 teaspoon garlic, minced
- 1 pound boneless, skinless, chicken breasts
- 1 teaspoon salt
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1/2 teaspoon ground pepper
- 1/4 teaspoon cayenne pepper
- 1 can (4-ounces) green chilies, chopped
- 2 can (15.5-ounces) cannellini beans
- 1 can (14.5-ounces) low-sodium chicken broth
- 1/2 cup heavy cream (optional)
- 1 cup plain 0 % Chobani greek yogurt
Instructions
- Heat oil in Dutch oven. Add onion and sauté until translucent.
- Stir in garlic. Add chicken, salt, cumin, oregano, pepper, cayenne and cook, stirring regularly until chicken is cooked through.
- Add chilies, beans and stock. Bring to a simmer, cover and cook 30 minutes.
- Uncover and stir in Chobani yogurt and cream (if desired). Taste for seasoning, ladle into bowls, and serve with a wedge of cornbread or crackers.
