Chili Con Carne
Ingredients
- 2 tablespoon vegetable oil
- 1 cup coarsely chopped onions
- 1 cup coarsely chopped green bell peppers
- 2 teaspoon minced garlic
- 1 1/2 pound lean ground beef or turkey
- 2 cup canned crushed tomatoes
- 2 cup beef broth
- 3 tablespoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon salt
- 1/2 teaspoon cayenne pepper
- 1/2 teaspoon dried oregano
- 15 1/4 ounce can kidney beans, rinsed and drained
Instructions
In a large stock pot over medium heat, add the oil. Add the onions and green bell peppers and saute until softened, 3 to 5 minutes, stirring frequently. Add the garlic and cook for 1 minute, stirring constantly. Add the ground beef and cook for 5 to 8 minutes, or until just cooked through, using a fork or spatula to break up the meat into small pieces. Add the tomatoes, broth, chili powder, cumin, salt, cayenne pepper, and oregano and stir to combine. Bring to a boil. Add the kidney beans. Reduce the heat and simmer for 45 minutes, or until thickened and the flavors have melded, stirring occasionally.
