Crunchy Cashew Chili
You won't be able to get enough of this Crunchy Cashew Chili, it's one of the most unique easy chili recipes I've seen. Also makes a great vegetarian dish.

Ingredients
- 2 onions, minced
- 2 green peppers, chopped
- 2 stalks celery, diced
- 3 cloves garlic, minced
- 1 bay leaf
- 1 teaspoon each basil, oregano, ground cumin
- 1 each salt, pepper
- 2 tablespoon chili powder
- 2 cup cooked kidney beans
- 1/4 cup red wine vinegar
- 1/2 cup cashews
- 1/4 cup raisins
- 1 can (28 ounces) diced tomatoes
Instructions
- Heat some olive oil in a large pot. Over a medium heat, saute the onions until clear.
- Then add the green peppers, celery and garlic and continue cooking for about 5 minutes.
- Then add the basil, oregano, cumin and chili powder and mix well with the vegetable mixture.
- Then add the can of tomatoes mixing well. Lastly, the kidney beans, vinegar, cashews, raisins, salt and pepper. Mix everything.
- Bring to the boil and then simmer with the lid on for about 1.5 hours. Make sure to check it periodically and give and good stir.
