Mr. McGreggor's Vegetable Chili

Ingredients
- 1/4 cup olive oil
- 1 1/2 cup celery, minced
- 1 1/2 cup carrot, thinly sliced
- 1 1/2 cup zucchini, diced
- 1 cup onion, chopped
- 1 cup fresh mushrooms, sliced
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 2 garlic cloves, minced
- 2 can (about 28 ounces) Italian tomatoes, chopped
- 2 tablespoon chili powder
- 1 tablespoon dried basil
- 1 tablespoon dried oregano
- 1 teaspoon salt
- 1 teaspoon pepper
- 1/2 cup chopped parsley
- 1/2 cup chopped fresh dill
- 2 can (about 19 ounces) beans of your choice
- chopped green onion
- shredded cheese
- white rice, cooked
Instructions
- Place olive oil, celery, carrot, zucchini, onion, mushrooms, red bell pepper, green bell pepper, garlic, tomatoes, chili powder, basil, oregano, salt, and pepper in a 6-quart slow cooker. Cook on high for about 3 hours, or until vegetables have almost reached the desired tenderness.
- Add parsley, dill, and beans and cook for one more hour.
- Serve with green onion, cheese and rice.
