Depression Era Chocolate Potato Cake
Using potatoes in place of flour was a tactic used in the Great Depression era to save money. This Depression Era Chocolate Potato Cake is an old-fashioned recipe for a deliciously moist chocolate cake you just have to try. Although including mashed potatoes in this cake recipe from scratch may seem strange, you'll never question it again after tasting a bite of this cake. This is a great dessert recipe to use up leftover mashed potatoes!

Ingredients
- 2 cup flour, sifted
- 2 teaspoon baking powder
- 1 teaspoon cinnamon
- 1 teaspoon nutmeg
- 1 cup soft margarine
- 2 cup sugar
- 4 eggs
- 1 1/2 squares unsweetened chocolate, melted
- 1 cup unseasoned mashed potatoes
- 1 cup cold coffee
- 1 teaspoon vanilla
- 1 cup chopped nuts
Instructions
- Preheat oven to 350 degrees F. Grease and flour two 9-inch layer cake pans.
- Mix the flour, baking powder, cinnamon, nutmeg, margarine and sugar together, then add eggs (beaten) one at a time. Add the melted squares of unsweetened chocolate and let cool.
- Mix in the mashed potatoes, cold coffee and vanilla and beat thoroughly. Add the chopped nuts.
- Pour in ingredients and bake for 30 minutes or until done.
