No Bake Eclair Cake
This no bake cake tastes just like an eclair but makes enough to feed a crowd. No Bake Eclair Cake is made with graham crackers, instant pudding and Cool Whip to make a quick and easy dessert. The graham cracker crust turns slightly soft from the pudding, and the ingredients settle in just enough over night to make a delicious layered cake. Serve this make ahead dessert at your next family gathering or church supper.

Ingredients
- graham crackers
- 1 large or 2 small packages instant vanilla pudding
- 2 1/2 to 3 cups milk
- 8 ounces Cool Whip
- 3 tablespoons margarine, softened
- 6 tablespoons cocoa
- 2 tablespoons oil
- 2 tablespoons white Karo syrup
- 2 teaspoons vanilla
- 1 1/2 cup powdered sugar
- 3 tablespoons milk
Instructions

Grease 9x13-inch pan and line bottom with one layer of whole graham crackers.

Beat together pudding mix and milk until thick. Mix in Cool Whip.

Pour half of mixture over graham crackers in pan. Top with another layer of crackers. Pour remaining pudding mix on top. Top with one more layer of crackers.

Beat together remaining ingredients with spoon until smooth. Spread over top layer of crackers.

Put in refrigerator until ready to serve, at least eight hours (do not cover).
