Old Fashioned Mud Cake
Never judge a cake by it's name. Old Fashioned Mud Cake is a delicious easy cake recipe that is made of cocoa, chopped nuts, marshmallows and topped with a cocoa frosting. Perfect for all chocolate lovers, your cake recipes have never had this much chocolate in them.
Ingredients
- 1 cup margarine softened
- 2 cups sugar
- 1 1/2 cup flour
- 1/2 cup cocoa
- dash salt
- 4 eggs
- 1 teaspoon baking powder
- 1 1/2 cup chopped nuts
- 1/2 teaspoon vanilla
- miniature marshmallows
- For the Cocoa Icing:
- 1 pound powdered sugar
- 1/3 cup cocoa
- 1/4 cup margarine, softened
- 1/2 cup milk
Instructions
For the Cake:

Preheat oven to 350 degrees F.

Mix margarine, sugar, flour, cocoa, salt, eggs, baking powder, nuts and vanilla well, and bake in a greased and floured 9 X 13 pan for 30 minutes.

Immediately after removing for oven, pour 1 small bag of miniature marshmallows over cake. When the cake is a little cool place marshmallows on top.
For the Icing:

Make the icing by melting the margerine in the cocoa and milk over low heat. Bring the mixture to a boil, then remove from the heat. Stir in the powdered sugar. Slowly mix in the the vanilla and stir. Pour warm mixture over marshmallows.
- Let the cake cool and lplace in the fridge, serve cooled.

This sounds yummy, but the marshmallow step is a little confusing. Are you supposed to put the entire bag of marshmallows on the cake while it is hot, or save some to put on top after the cake has cooled a little?
