Southern Chocolate Fudge Cake

Whenever we want an excellent easy dessert recipe, we always turn to country-inspired sweets. This Southern Chocolate Fudge Cake recipe is one of our all-time favorites because it features an incredible chocolate fudge frosting on top. For anyone who's a chocoholic or simply a cocoa fan, this simple chocolate cake recipe, inspired by Southern tradition, should be your new go-to sweet treat.

Ingredients

  • 2 cups sugar
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1 cup water
  • 1 stick butter or margarine
  • 1/2 cup cooking oil
  • 4 tablespoons cocoa powder
  • 1/2 cup buttermilk
  • 2 eggs, beaten
  • 1 teaspoon vanilla extract
  •  
  • For the Chocolate Fudge Frosting
  • 6 tablespoons milk
  • 1 pound confectioners' sugar
  • 1 teaspoon vanilla extract
  • 1 cup chopped pecans

Instructions

  1. Preheat oven to 400 degrees F.
     
  2. Sift together the sugar, flour, baking soda, salt and cinnamon. Set aside.
     
  3. In a saucepan, place the water, butter, oil and cocoa powder. Bring to a boil and pour over the dry ingredients. Mix well.
     
  4. Combine the buttermilk, eggs and vanilla, mixing well.
     
  5. Add to the chocolate batter and mix well. Pour into a greased and floured 13 x 9 inch pan. Bake for 20 minutes, or until done.
     
  6. Start frosting 5 minutes before cake is done. Place butter, cocoa powder and milk in a saucepan. Bring to a boil, being careful not to burn.
     
  7. Add confectioners' sugar and vanilla. Mix well.
     
  8. Add chopped pecans and mix.
     
  9. When cake comes from the oven, poke holes all over with a utility fork. Spread frosting on hot cake and serve from the pan.

I have been making this cake for YEARS. Everybody loves it, however I use a straw to poke holes in the cake.
