Southern Chocolate Fudge Cake

This Southern Chocolate Fudge Cake recipe is one of our all-time favorites because it features an incredible chocolate fudge frosting on top. Ingredients
- 2 cup sugar
- 2 cup all-purpose flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
- 1 teaspoon ground cinnamon
- 1 cup water
- 1 stick butter or margarine
- 1/2 cup cooking oil
- 4 tablespoon cocoa powder
- 1/2 cup buttermilk
- 2 eggs, beaten
- 1 teaspoon vanilla extract

- For the Chocolate Fudge Frosting
- 6 tablespoon milk
- 1 pound confectioners' sugar
- 1 teaspoon vanilla extract
- 1 cup chopped pecans
Instructions

Preheat oven to 400 degrees F.

Sift together the sugar, flour, baking soda, salt and cinnamon. Set aside.

In a saucepan, place the water, butter, oil and cocoa powder. Bring to a boil and pour over the dry ingredients. Mix well.

Combine the buttermilk, eggs and vanilla, mixing well.

Add to the chocolate batter and mix well. Pour into a greased and floured 13 x 9 inch pan. Bake for 20 minutes, or until done.

Start frosting 5 minutes before cake is done. Place butter, cocoa powder and milk in a saucepan. Bring to a boil, being careful not to burn.

Add confectioners' sugar and vanilla. Mix well.

Add chopped pecans and mix.
- When cake comes from the oven, poke holes all over with a utility fork. Spread frosting on hot cake and serve from the pan.
