Ingredients

  • 4 ounce cream cheese, softened
  • 1/2 cup butter, softened
  • 1 cup flour
  • 1/2 pound pecan halves
  • 1 bag caramels
  • 12 ounce chocolate chips
  • non-pareils

Instructions

  1. Place softened cream cheese and butter in a bowl.
     
  2. Gradually add flour to form a dough.
     
  3. Chill dough in refrigerator.
     
  4. Preheat oven to 400 degrees F.
     
  5. Roll out and cut with a 2" circle cookie cutter.
     
  6. Place on ungreased cookie sheet and bake for 12 minutes.
     
  7. Remove from oven, place 1/2 pecan onto each circle.
     
  8. Place an unwrapped caramel on top of each pecan.
     
  9. Return cookies to oven and watch closely.  Remove from oven when caramels have melted.
     
  10. Lightly flatten caramels with a buttered knife.
     
  11. Melt chocolate chips in a double boiler or microwave.
     
  12. Stir chips and spread on top of each melted caramel.
     
  13. Sprinkle non-pareils on top of warm melted chocolate.
