Ingredients

  • 3/4 cup butter softened
  • 3/4 cup sugar
  • 2 cups quick cooking oatmeal
  • 3 tablespoons cocoa
  • 1 tablespoon water
  • 1 1/2 teaspoon vanilla
  • 1/3 cup powdered sugar

Instructions

  1. In a medium bowl, combine soft butter with the sugar, beating with a wooden spoon until smooth.
     
  2. Add the oatmeal and cocoa and stir. Combine water and vanilla and stir in until everything is well mixed.
     
  3. Cover with plastic wrap and refrigerate for 2 – 3 hours.
     
  4. Place powdered sugar into a small bowl. Scoop portions of the oatmeal mixture with a #2 ice cream scoop or tablespoon and roll in your palms to make golf-ball size bites.
     
  5. Drop a few at a time into the powdered sugar at a time and roll to coat.
     
  6. Spoon onto foil or parchment paper and allow to sit for 20 minutes before storing in a tightly covered container in the refrigerator, with foil or parchment between layers.
