Anzac Cookies
For a crispy cookie recipe, try the Anzac Cookies. They're great for Christmas or any time of year. This cookie will please everyone - serve this holiday season as a sweet treat.
Ingredients
- 1 cup rolled oats
- 1 cup all-purpose flour
- 2/3 cup granulated sugar
- 1 cup grated or flaked coconut
- 1 teaspoon baking soda
- 1/8 teaspoon salt
- 1/2 cup unsalted butter
- 3 tablespoon Lyle's Golden Syrup
Instructions

Preheat oven to 325 degrees F. Grease cookie sheet. In a large bowl, combine oats, flour, sugar, coconut, baking soda and salt; set aside.

In a small saucepan, combine butter and golden syrup.

Place over medium heat, stirring occasionally, until butter is melted.

Pour into flour mixture; stir to combine. Gather dough by well rounded teaspoons; it is very crumbly, so you will need to use your fingers to lightly pack the dough onto the spoon.

Invert mounds of dough, 1 1/2 inches apart on prepared baking sheet, shaping with your fingers if necessary.

Bake 10-13 minutes or until deep golden brown.

Remove from oven; let stand on cookie sheet 3 minutes. Cool on racks.

Store in airtight container at room temperature for 1 week; can be frozen for longer storage. Makes 3 dozen cookies.
