Butter Crackers
Ingredients
- 1 egg, beaten
- 1/3 cup milk
- 1 1/2 cup flour
- 1 tablespoon sugar
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/3 cup butter
- coarse salt, toasted sesame seeds or poppy seeds
Instructions
Combine beaten egg and milk. Stir together flour, sugar, baking powder and the 1/2 teaspoon salt. Blend in the butter till the mixture resemble cornmeal. Make a depression in the center of the flour mixture. Add the milk mixture all at once. Stir gently till all moisture is absorbed and the mixture forms a loose ball. Turn dough out onto a lightly floured surface. Knead dough 10 to 12 times or until dough is mostly smooth. Roll into a 9-inch square. Fold dough into thirds to form a 9x3" rectangle. Repeat rolling into a 9-inch square and folding in thirds 3 more times. Divide dough in half. Roll each half of the dough into a 12-inch square. Using a sharp knife, cut dough into 1 1/2-inch squares, triangles or diamond shapes. Place on an ungreased baking sheet. Prick crackers well. Lightly brush with water. Sprinkle with salt, sesame or poppy seeds. Bake in a 300 degree F oven for 20 to 25 minutes or till lightly browned. Remove the crackers from the baking sheet and cool on a wire rack. Makes about 96 crackers.
