    Butter Pecan Ice Box Cookies

    Here's a wonderful idea for the holiday season- why not make these Butter Pecan Ice Box cookies to switch things up a bit? The recipe calls for pecans and brown sugar, already a delicious combo. Try them this Christmas!

    Ingredients

    • 2 1/4 cups all purpose flour
    • 1/4 teaspoon salt
    • 1 teaspoon cream of tartar
    • 1 cup butter, softened
    • 1 cup packed light brown sugar
    • 1 egg
    • 1 teaspoon vanilla extract
    • 1 cup coarsely chopped pecans

    Instructions

    1. In a medium bowl, stir together flour, salt and cream of tartar. In a large bowl, beat together butter and brown sugar until light and fluffy.
       
    2. Beat in egg and vanilla. Blend in flour mixture and pecans.
       
    3. Form into 2 rolls, 8 to 10 inches long. Wrap in plastic wrap and refrigerate until firm enough to slice.
       
    4. Preheat oven to 350 degrees F.
       
    5. Lightly grease baking sheets. Slice dough into 1/4 inch-thick rounds. Arrange on ungreased baking sheets about 1 inch apart.
       
    6. Bake 8-10 minutes or until light golden brown.
       
    7. Cool slightly on baking sheets before moving to wire racks.

    First you say lightly greased bake shts. and then ungreased.. Which is it??

    This recipe is so easy and so good. I also use this recipe to replace the pecans with black walnuts. A gr8 recipe !!!!
