Butter Pecan Ice Box Cookies
Here's a wonderful idea for the holiday season- why not make these Butter Pecan Ice Box cookies to switch things up a bit? The recipe calls for pecans and brown sugar, already a delicious combo. Try them this Christmas!
Ingredients
- 2 1/4 cup all purpose flour
- 1/4 teaspoon salt
- 1 teaspoon cream of tartar
- 1 cup butter, softened
- 1 cup packed light brown sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1 cup coarsely chopped pecans
Instructions
- In a medium bowl, stir together flour, salt and cream of tartar. In a large bowl, beat together butter and brown sugar until light and fluffy.
- Beat in egg and vanilla. Blend in flour mixture and pecans.
- Form into 2 rolls, 8 to 10 inches long. Wrap in plastic wrap and refrigerate until firm enough to slice.
- Preheat oven to 350 degrees F.
- Lightly grease baking sheets. Slice dough into 1/4 inch-thick rounds. Arrange on ungreased baking sheets about 1 inch apart.
- Bake 8-10 minutes or until light golden brown.
- Cool slightly on baking sheets before moving to wire racks.
