"Caramel Mocha Cookies are soft and chewy cookies, rich with chocolate with a strong hit of coffee and a surprise caramel filling! Cookie Making Tips Make sure your butter is room temperature. Not melted and not hard. You should be able to beat the butter smooth with no lumps. Beat the butter and sugars together until light and fluffy. It really is easier with a hand beater or mixer. Make sure the water is boiling so the coffee granules dissolve completely. You don’t want to bite into a cookie and eat pure coffee granules. (yuck!) Don’t over-beat the flour and cocoa. We just need them incorporated enough to form a dough. Make sure you cover the piece of caramel chocolate completely with the cookie dough to avoid it melting out the sides or bottom of your cookies in the oven."
