Cheesy Bacon Biscuits

Are you asking yourself what can make your biscuits recipes better? How about some cheese and bacon? These Cheesy Bacon Biscuits melt in your mouth with every bite. It's time to make your biscuits exciting.

Ingredients

  • 2 rashers of bacon
  • 2 ounces butter
  • 1 egg yolk
  • 2 ounces Cheddar cheese, grated
  • 2/3 cup flour
  • pinch salt
  • 2 ounces grated cheese, (extra)

Instructions

  1. Remove rind from bacon, fry until golden on both sides, chop finely.
     
  2. Beat butter until creamy, add egg yolk, mix well. Add grated cheese, mix well.
     
  3. Add sifted flour and salt, mix to a firm dough; wrap in plastic wrap and refrigerate 30 minutes.
     
  4. Roll dough out on a lightly floured surface to 1/8 inch thick.
     
  5. Cut into rounds with a 1 1/2 inch fluted cutter. Put rounds on greased oven trays, sprinkle with bacon and extra cheese.
     
  6. Bake in moderate oven 10 - 12 minutes or until golden. Allow to cool on a wire rack.

What is a rasher????????

A rasher of bacon is a think slice, but it's an old-fashioned term, so this recipe probably comes from someone's great grandmother's recipe box! lol I also wonder how these biscuits rise. I would just use self-rising flour to be on the safe side if I were to make these.

OK, how are these biscuits supposed to rise??? Use either self-rising flour or add 1 tsp of baking powder. And why "sifted flour"?
