Chewy Oatmeal Raisin Cookies

If you love oatmeal cookie recipes (and who doesn't?) then you're bound to love this quick and easy recipe for Chewy Oatmeal Raisin Cookies. Baking cookies is always fun, and the final results will astound you.

Ingredients

  • 1 cup margarine or butter, softened (2 sticks)
  • 1 cup brown sugar, firmly packed
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 1/2 cup flour
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 3 cups oats
  • 1 cup raisins

Instructions

  1. Beat together butter and sugars until creamy. Add eggs and vanilla and beat in well.
     
  2. Combine flour, baking soda, cinnamon and salt. Add to butter mixture, mixing well.
     
  3. Stir in oats and raisins, mixing well again. Drop by rounded tablespoonful onto ungreased cookie sheets.
     
  4. Bake 10-12 minutes at 350 degrees F.

My husband really likes these - they are chewy and not too sweet. The hint of cinnamon are a real bonus!
