Chewy Oatmeal Spice Cookies
Ingredients
- 5 1/4 cups brown sugar, firmly packed
- 3 1/2 cups granulated sugar
- 1 3/4 cup unsalted butter, softened
- 1 quart plus 1 cup apple butter or applesauce
- 14 egg whites or 7 whole egg
- 3/4 cup plus 2 Tbs. skim milk
- 1/4 cup plus 1 Tbs. vanilla extract
- 10 1/2 cups all purpose flour
- 2 Tbs. plus 1 tsp. baking soda
- 2 Tbs. plus 1 tsp. ground cinnamon
- 1 1/4 Tbs. salt
- 1 3/4 teaspoon nutmeg
- 3 3/4 lbs. quick or old fashioned oatmeal, uncooked
- 7 cups raisins or dried mixed fruit, diced if mixed fruit
Instructions
Preheat oven to 350 F. Lightly spray a cookie sheet with nonstick cooking spray. Beat together sugars and butter until well blended. Add next 4 ingredients and beat well. Combine flour and next 4 ingredients in another bowl. Stir into sugar mixture. Stir in oatmeal and raisins and mix well. (Dough will be moist.) Drop by rounded tablespoonfuls onto prepared cookie sheet. Bake 10-12 minutes or until edges are light golden brown. Cool 1 minute on cookie sheet and remove to wire rack. Cool completely. Store in tightly covered container. Variation: Easy Bar Cookies: Spread dough evenly onto bottom of an ungreased 13x9 inch baking pan. Bake 25-30 minutes or until edges are light golden brown. Cool completely and cut into bars. Store tightly covered. This recipe serves 112 people. Because this recipe is for a particular size pan, it adjusts the number of servings only in multiples of 16.The instructions describe how to prepare the ingredients for one pan. There are enough ingredients to prepare 7 pans.
