Giant Graham Cracker Chocolate Chip Cookies

Ingredients

  • 1 cup graham cracker crumbs
  • 2/3 cup flour
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/4 pound room temp butter
  • 2/3 cup sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1/2 cup giant chocolate chips

Instructions

Heat oven to 325 deg f. Combine cracker crumbs, flour, soda and salt. With an electric mixer, at medium speed, cream butter and sugar until light and fluffy. Add in egg and vanilla. Mix well. Add dry mix slowly. Drop by 1/4 cup fulls onto baking sheet, about three to a sheet. Flatten slightly with palm of hand. Press chips into dough. Bake until edges are golden brown, about 15 minutes. Cool on baking sheets for about one minute before removing to wire racks.
