Mocha Bean Cookies

Ingredients

  • 1/2 cup butter, softened
  • 1/2 cup brown sugar
  • 1 egg
  • 1 teaspoon vanilla
  • 1 1/4 cup flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 6 oz. chocolate covered mocha beans
  • 1/2 cup chopped, toasted hazelnuts

Instructions

Preheat oven to 350 F. Cream butter and sugars together. Add egg and vanilla and mix well. Blend in dry ingredients, in 3 batches, until well mixed. Fold in mocha beans and chopped hazelnuts. Drop tablespoons of dough onto greased cookie sheet. Bake 8-10 minutes or until golden brown. Serve warm or cooled. Makes 4 dozen cookies.
