Moonlight Cookies
Ingredients
- 1 tube premade sugar cookies (or you can make your own)
- 1 cup coconut
- 1/4 cup finely chopped pecans
- Lemon curd
- White Chocolate for drizzling
Instructions
Mix cookie dough with coconut and nuts. Roll out into small balls. Place on cookie sheet. Using your thumb press in middle of cookie. Put 1/2 tsp of lemon curd into "thumb impression". Bake for 8-11 minutes at 350 degrees. When cookies are cooled drizzle with melted white chocolate. Tip: When pressing out centers of cookie, press your thumb into powdered sugar before you press each cookie. The cookie won't stick to your fingers this way.
