Pineapple Bars

Who doesn't love a bright and sunny lemon bar? Well, this recipe takes it up a notch and delivers a different texture with the addition of cream cheese, coconut flakes, and lemon cake mix. Instead of the more gooey texture you're used to, these have all the lemony tang but more of a cake-like taste. Bring these pineapple bars to a summer (or winter!) potluck. They're sure to make you feel like sipping a tropical beverage out on the beach.

Ingredients
- 1 box lemon cake mix
- 4 large eggs
- 1 stick melted butter
- 1 (16-ounce) box powdered sugar
- 8 ounce package cream cheese, softened
- 2 cup sweetened flaked coconut
- 1 teaspoon vanilla extract

Grease a 9x13-inch pan.

In a large bowl, combine lemon cake mix with melted butter, vanilla extract, and 2 eggs. Mix until fully combined and pour into greased pan. Spread evenly.

In another large bowl, combine powdered sugar, remaining 2 eggs, cream cheese, and coconut flakes. Mix well until evenly combined.

Pour mixture on top of your other mixture in the pan and spread evenly.

Bake in your oven at 350 degrees F for 30 minutes.
