Potato Chip Cookies

Ingredients

  • 1 cup crushed potato chips (salted)
  • 1 cup unsalted butter, softened
  • 1/2 cup white sugar
  • 1 teaspoon vanilla
  • 2 cup flour
  • 1/2 cup chopped nuts, optional

Instructions

Preheat oven to 350 F. Prepare chips by putting in a plastic bag and crushed them with a rolling pin. In a mixing bowl, cream the butter and sugar. Stir in vanilla. Fold in flour and crushed chips and blend until smooth and mixture holds together. Form into l inch balls. Press onto a very lightly greased cookie sheet or one that has been lined with baking parchment. Using a drinking glass, dipped in sugar, press cookies gently to flatten. Re-dip glass in sugar as required. Bake for 11 to 14 minutes - until they turn golden around the edges. Makes 2-3 dozen cookies.
