Wine Gum Cookies
Ingredients
- 125g vegetable shortening
- 1/2 cup brown sugar
- 1/2 cup white sugar
- 1 egg
- 1/2 teaspoon vanilla essence
- 3/4 cup plain flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 3/4 cup rolled oats
- 1/2 cup coconut
- 1/2 to 3/4 cup chopped wine gums
Instructions
Preheat oven to 190 degrees C. Have two ungreased cookie sheets ready (I prefer to use baking parchment on them). Beat the first five ingredients together, sift in the next three and mix. Stir in the remaining ingredients and mix well. Drop teaspoonfuls onto the cookie sheets and bake for 10-15 minutes. Remove from the cookie sheets and allow to cool on a rack.
