    Zucchini Oatmeal Cookies

    Ingredients

    • 3/4 cup soft margarine
    • 1 cup sugar
    • 1 egg
    • 2 teaspoons cinnamon
    • 1/2 teaspoon baking soda
    • 1/4 teaspoon nutmeg
    • 1 cup grated zucchini
    • 1-1/2 cups flour
    • 1/2 teaspoon salt
    • 2 cups oats
    • 1/2 cup raisins and/or 1/2 cup nuts

    Instructions

    Mix together margarine, sugar and egg. Cream well. Add other ingredients and mix until all are blended. Bake at 400 degrees for 12-15 minutes.
