Apple Sandwich Cookies
Here's a great cookie recipe that combines the flavors of the holiday season with brown sugar and golden syrup. Apple sandwich cookies are perfect for Christmas and will make for a wonderful dessert dish.
Notes
Date or fig filling may also be used if desired. For date filling: 1/3 cup Roger's Golden syrup 1/2 poud chopped dates or figs 1/3 cup boiling water 1 tablespoon lemon juice.
Ingredients
- 1 cup shortening
- 1/2 cup brown Sugar
- 1/2 cup Roger's Golden syrup
- 2 eggs beaten
- 3 cup all-purpose flour
- 1/2 teaspoon salt
- 2 1/4 teaspoon baking powder
- 3 apples
- 1 cup Roger's golden syrup
- 1 lemon, juiced and grated for rind
Instructions
- Cream shortening, add sugar and syrup gradually. Beat until light and fluffy. Add well beaten eggs and blend thoroughly.
- Fold in flour with salt and baking powder.
- Chill dough well. Roll thin on slightly floured board and cut in 3 inch rounds.
- Bake on lightly greased baking sheet 10 to 12 minutes at 350 degrees F or until nicely browned. While still warm put together in pairs with filling.
- Filling: Combine ingredients and bring to a boil and simmer gently for 10 minutes.
- Cool and spread between cookies.
