Cowpoke Cookies
If you can call a cookie "hearty," this would be that cookie. Cowpoke Cookies bring coconut, oatmeal, chocolate chips, and pecans together for a medley of flavors that are rugged enough for the Lone Ranger himself. These are the perfect cookie to make when you can't quite decide what mood you're in. They taste (and smell) amazing straight out of the oven and are a tall glass of milk's perfect companion. This easy cookie recipe is one you can whip up any time you're feeling a sweet tooth coming on, so keep it near by and avoid a cookie crisis.
Ingredients
- 1 1/2 cup all-purpose flour
- 2 teaspoon baking powder
- 2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 1/2 stick unsalted butter, very soft
- 3/4 cup white sugar
- 3/4 cup brown sugar packed
- 2 large eggs
- 2 teaspoon vanilla extract
- 1 1/2 cup dark chocolate chips
- 1 1/2 cup old-fashioned rolled oats
- 1 cup sweetened coconut flakes
- 1 cup chopped pecans

Instructions

Preheat oven to 350 degrees F.

In a large bowl, mix flour, chocolate chips, oats, coconut and pecans with a wooden spoon.

In another bowl, mix together sugars, butter, eggs, vanilla, salt, baking powder, and baking soda until well combined.

Stir wet mixture into the dry mixture.

For each cookie, drop ¼ cup of dough onto cookie sheet sprayed with cooking spray, spacing 3 inches apart.

Bake 17-20 minutes, until edges are lightly browned.

Remove to rack to cool.
