Crunchy Potato Chip Cookie

Ingredients

  • 1 cup softened butter or margarine
  • 1 cup sifted powdered sugar
  • 2 egg yolks
  • 1 teaspoon vanilla
  • 1 1/2 cup all purpose flour
  • 3/4 cup crushed fresh potato chips
  • 1/2 cup finely chopped pecans

Instructions

  1. Preheat oven to 350 degrees F.
     
  2. Combine butter and the 1 cup powdered sugar in a large mixing bowl.
     
  3. Beat with an electric mixer on medium speed for 3 minutes.
     
  4. Add egg yolks and vanilla and beat until well mixed. Gradually beat in the flour.
     
  5. Stir in potato chips and pecans with a wooden spoon.
     
  6. Drop by rounded teaspoonfuls onto a greased cookie sheet.
     
  7. Bake at 350 degrees F  for 10 minutes. Transfer to a wire rack.
     
  8. While cookies are still warm sift with powdered sugar. Cool completely. Store in airtight containers.
